Microwave Citrus Cherry Crisp Recipe

¼ cup butter or margarine
1 cup crushed gingersnaps
½ cup chopped pecans
2 tablespoons flour
1 can (21 ounces) cherry pie filling
2 large
Florida grapefruit, peeled and sectioned


In small glass bowl or other microwave-safe dish, melt butter on HIGH, 1 ½ minutes.  Stir in crushed gingersnaps, pecans and flour.  In an 8- or 9-inch glass pie plate or other shallow microwave-save dish, spread pie filling evenly.  Cook on HIGH 2 minutes.  Arrange grapefruit sections over filling; press sections halfway into filling.  Sprinkle evenly with crumb mixture, leaving a 1-inch border around the outside.  Cook, uncovered, 3 minutes; let stand 1 minute.  Serve warm with vanilla ice cream or heavy cream.

YIELD:  6 servings.  (recipe prepared 600-700 watt microwave oven.)
