1 Hale Groves Ruby Red Grapefruit
8 cups kale, thinly torn (remove center stems and ribs)
1/4 cup toasted walnuts
1/4 cup crumbled feta cheese
2 tablespoons extra-virgin olive oil
1 tablespoon Hale Groves Orange Blossom Honey
1/8 teaspoon organic sea salt
1/8 teaspoon freshly ground black pepper
1.? Cut grapefruit in half. With a sharp knife, carefully loosen and remove each section leaving the membrane. Squeeze the halves to extract the remaining juice; reserve the juice in a bowl.
2. In a large salad bowl, gently toss the kale, grapefruit sections, walnuts and feta cheese.
3. In a separate bowl, whisk together the olive oil, honey, sea salt, pepper and reserved grapefruit juice.
4. Drizzle over salad and toss lightly to coat. Serve immediately; smile.
