Sweet Mango Relish Recipe

Green mangos (enough to make 1 quart)
2 large onions chopped or grind
6 sweet red peppers chopped or grind 
2 large hot peppers chopped or grind
1 tablespoon of salt
1 tablespoon white mustard seed
1 tablespoon celery seed
4 cups sugar
1 cup vinegar
2 cups raisins


Peel green mangos, cut from seed, chop or put through coarse blade of food chopper enough to make one quart.  In large saucepan combine all ingredients chopped onions, red peppers and hot peppers.  Add salt, white mustard seed, celery seed, sugar, vinegar and raisins.  Bring to boil and boil 10 minutes.  Let stand overnight.  Next morning cook until slightly thickened.  Pack boiling hot and seal.
