• Cranberry and Orange Sauce Recipe

      INGREDIENTS ½ pound fresh cranberries 1 orange (peeled, segmented and roughly chopped) Some sugar (brown preferably) Dash of lemon (optional, but it balances sugar a bit) Some extra water (to get things started) PREPARATION Basically, just mix in a pan and simmer gently for about 20 minutes with a lid on the pan (give it an occasional stir with a spoon, and add some water if it is getting too dry).  Should give a nice thick well textured goop.  Skinning is a matter of preference.

          INGREDIENTS 2 pounds sweet potatoes or yams, peeled 3 tablespoons good quality olive oil 1 cup orange juice ¼ cup white wine such as Riesling or Gewurztraminer 1 ½ teaspoons fresh sage, chopped 1 teaspoon salt Ground black pepper to taste 1 ½ tablespoons honey PREPARATION Preheat oven to 375 degrees.             INGREDIENTS 1 cup sifted flour 1 cup sugar 1 teaspoon baking powder ¾ teaspoon salt 1 teaspoon cinnamon 1 teaspoon nutmeg 1 egg 1/3 cup melted shortening ½ cup chopped pecans (optional) 4 cups sliced peeled mangos PREPARATION Line buttered 8 x 8 x 2 inch baking dish with mango slices.  Sift dry ingredients together and work 1 egg with pastry blender until consistency of coarse meal.  Sprinkle over mango slices.  Drizzle the melted butter over the top.  Sprinkle with chopped nuts.  Bake at 375 degrees for 45 minutes or until brown.

                    INGREDIENTS 2 cups fresh broccoli flowerets 1 ½ cups thinly sliced fresh carrots 3 cups Hale grapefruit sections ½ cup Hale grapefruit juice, drained from sections 1 ½ cups drained chick peas 1/3 cup raisins 1 cup broken walnuts PREPARATION In medium saucepan, cook broccoli and carrots in 1 inch boiling, salted water for 3 minutes.
