{"id":41049,"date":"2012-06-01T20:46:00","date_gmt":"2012-06-01T20:46:00","guid":{"rendered":"https:\/\/www.halegroves.com\/blog\/recipe\/salmon-crepes\/"},"modified":"2022-02-11T12:02:38","modified_gmt":"2022-02-11T12:02:38","slug":"salmon-crepes","status":"publish","type":"cuisine-recipe","link":"https:\/\/www.halegroves.com\/blog\/recipe\/salmon-crepes\/","title":{"rendered":"Salmon Crepes Recipe"},"content":{"rendered":"<p><span style=\"font-family: Tahoma\"><span style=\"font-size: medium\"><span style=\"color: #ff9900\">INGREDIENTS<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">1 recipe crepes*<br \/>  1\/4 cup butter or margarine<br \/>  1 cup chopped onions<br \/>  1\/4 cup flour<br \/>  1 cup Hale grapefruit juice<br \/>  1 cup chicken broth<br \/>  1 teaspoon Worcestershire sauce<br \/>  1 teaspoon salt<br \/>  3\/4 teaspoon dried dill weed<br \/>  1 bay leaf<br \/>  2 or 3 dashes hot pepper sauce<br \/>  1 can (1 pound)pink salmon, drained, boned, broken into chunks<br \/>  1 1\/2 cups diced cooked potatoes (2 medium)<br \/>  1 Hale grapefruit, peeled, sectioned<br \/>  1 tablespoon chopped parsley<\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">*CREPES<\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">4 eggs<br \/>  1\/2 cup milk<br \/>  1\/8 teaspoon salt<br \/>  6 tablespoons whole wheat flour<br \/>  Butter for frying<\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: medium\"><span style=\"color: #ff9900\">PREPARATION<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">Prepare one recipe crepes*; set aside.<\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">In medium saucepan, melt butter over medium heat; saute&acute; onions until golden. Stir in flour, cook 1 minute. Gradually stir in grapefruit juice and chicken broth; add Worcestershire sauce, salt, dill weed, bay leaf and hot pepper sauce. Cook, stirring constantly, until sauce thickens and boils, cook 2 minutes longer.<\/span> <span style=\"font-size: small\">In medium bowl, combine salmon, potatoes, and 1 cup of the grapefruit sauce; mix gently.<\/span> <span style=\"font-size: small\">Place 2 heaping tablespoons salmon filling on each crepe; roll crepes; place side by side in a 12-inch skillet. Pour remaining grapefruit sauce over crepes. Cover skillet. Heat slowly 10 minutes.<\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">Just before serving, add grapefruit sections and sprinkle with parsley. <\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">YIELD: 4 to 6 servings. <\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">*CREPES (preparation)<\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">In a small bowl of electric mixer, combine eggs, milk, salt and flour. Beat until smooth.<\/span> <span style=\"font-size: small\">Cook crepes in hot, buttered, 6-inch skillet, using about 2 tablespoons of batter for each crepe. Tilt pan quickly to make a very thin crepe. Brown lightly on one side, turn to brown other side.
