{"id":41095,"date":"2012-12-19T02:26:00","date_gmt":"2012-12-19T02:26:00","guid":{"rendered":"https:\/\/www.halegroves.com\/blog\/recipe\/orange-bulgur-vegetarian-casserole\/"},"modified":"2022-02-11T12:02:43","modified_gmt":"2022-02-11T12:02:43","slug":"orange-bulgur-vegetarian-casserole","status":"publish","type":"cuisine-recipe","link":"https:\/\/www.halegroves.com\/blog\/recipe\/orange-bulgur-vegetarian-casserole\/","title":{"rendered":"Orange-Bulgur Vegetarian Casserole Recipe"},"content":{"rendered":"<\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: medium\"><span style=\"color: #ff9900\">INGREDIENTS<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">&frac14; cup unsalted butter or margarine<br \/>  &frac12; cup chopped onion<br \/>  &frac12; cup chopped celery<br \/>  1 clove garlic, minced<br \/>  1 cup uncooked bulgur wheat<br \/>  1 cup fresh <span style=\"color: #ff6600\">Hale orange juice<br \/>  <\/span>1 cup water<br \/>  1 can (15 ounces) kidney beans, drained<br \/>  &frac14; pound fresh mushrooms, sliced<br \/>  1\/3 cup raisins<br \/>  &frac14; cup wheat germ<br \/>  2 <span style=\"color: #ff6600\">Hale oranges<\/span>, peeled and sectioned<\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: medium\"><span style=\"color: #ff9900\">PREPARATION<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">In large skillet, melt butter over medium heat; saut&eacute; onion, celery and garlic 1 minute. Add bulgur, continue to cook, stirring 5 minutes.<\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">Stir in <\/span><\/span><span style=\"font-family: Verdana; font-size: 10pt\"><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">orange juice<\/span><\/span><\/span><span style=\"font-family: Tahoma\"><span style=\"font-size: small\"> and water, bring to boil. Add kidney beans, mushrooms, raisins and wheat germ. Reduce heat and simmer, covered 15 to 20 minutes until bulgur is tender and all liquid is absorbed. Spoon into serving dish. Garnish with orange sections.<br \/>  Yield: 4 to 6 servings<\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">Note: This mixture is excellent used as a stuffing for whole vegetables. Fill tomatoes, bell peppers or squash halves with cooked bulgur mixture.
