{"id":41129,"date":"2014-03-06T11:21:00","date_gmt":"2014-03-06T11:21:00","guid":{"rendered":"https:\/\/www.halegroves.com\/blog\/recipe\/shrimp-bigarade-with-orange-zest-and-juice\/"},"modified":"2022-02-11T12:02:45","modified_gmt":"2022-02-11T12:02:45","slug":"shrimp-bigarade-with-orange-zest-and-juice","status":"publish","type":"cuisine-recipe","link":"https:\/\/www.halegroves.com\/blog\/recipe\/shrimp-bigarade-with-orange-zest-and-juice\/","title":{"rendered":"Shrimp Bigarade with Orange Zest and Juice Recipe"},"content":{"rendered":"<\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: medium\"><span style=\"color: #ff9900\">INGREDIENTS<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">1 large Florida orange, zested and juiced<br \/>  1 bay leaf<br \/>  2 sprigs thyme<br \/>  12 jumbo shrimp, cleaned, pooled and do-veined<br \/>  1 tablespoon olive oil<br \/>  2 large shallots, finely diced<br \/>  2 teaspoons brown sugar<br \/>  1 tablespoon champagne vinegar<br \/>  1 &frac12; cups Florida orange juice<br \/>  &frac12; teaspoon salt<br \/>  &frac14; teaspoon ground black pepper<br \/>  2 tablespoons scallion, cut on a bias<br \/>  Rice<\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: medium\"><span style=\"color: #ff9900\">PREPARATION<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">&bull;&nbsp;In a stainless steel bowl combine the zest and juice from 1 large <\/span><\/span><span style=\"font-family: Verdana; font-size: 10pt\"><a href=\"http:\/\/www.halegroves.com\/navel-oranges\/c\/ft_1001_7\/\"><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">Florida orange<\/span><\/span><\/a><\/span><span style=\"font-family: Tahoma\"><span style=\"font-size: small\">, bay leaf, thyme and shrimp, cover and marinate for 1 hour.<br \/>  &bull;&nbsp;Warm olive oil in a large saut&eacute; pan. Add shallots and cook until translucent, approximately 5 minutes. Add shrimp with marinate and saut&eacute; for approximately 1 minute on medium heat. Add brown sugar and mix until dissolved. Add champagne vinegar and stir together, then pour in the 1 &frac12; cps of Florida orange juice and bring the mixture to a simmer. Remove the shrimp and reduce the liquid by half. Remove and discard the thyme and bay leaf. Season sauce with salt and pepper and continue to cook until thickened.<br \/>  &bull;&nbsp;Serve on bed of rice; pour the sauce over the shrimp.
