{"id":41256,"date":"2012-10-16T23:37:00","date_gmt":"2012-10-16T23:37:00","guid":{"rendered":"https:\/\/www.halegroves.com\/blog\/recipe\/beef-with-tangerines\/"},"modified":"2022-02-11T12:02:58","modified_gmt":"2022-02-11T12:02:58","slug":"beef-with-tangerines","status":"publish","type":"cuisine-recipe","link":"https:\/\/www.halegroves.com\/blog\/recipe\/beef-with-tangerines\/","title":{"rendered":"Beef with Tangerines Recipe"},"content":{"rendered":"<p><span style=\"font-size: medium\"><span style=\"font-family: Tahoma\"><span style=\"color: rgb(255,153,0)\">INGREDIENTS<\/span><\/span><\/span><span style=\"font-family: Tahoma\"><\/p>\n<p>  <span style=\"font-size: small\">2 pounds lean beef chuck, rump, or round, cut in 1 &frac14; inch chunks<br \/>  flour for dredging<br \/>  3 tablespoons vegetable oil<br \/>  2 cups dry red wine<br \/>  1 cup rich beef stock<br \/>  &frac34; pound small white onions, peeled<br \/>  2 large carrots, peeled and cut in 1 inch chunks<br \/>  2 large garlic cloves, peeled and crushed<br \/>  3 tablespoons soy sauce<br \/>  &frac12; &#8211; &frac34; teaspoon crushed red pepper, to taste<br \/>  1 teaspoon granulated sugar<br \/>  5 slices fresh gingerroot, peeled, about 1\/8 inch thick<br \/>  2 <span style=\"color: #ff9900\">Hale Groves tangerines<br \/>  <\/span>1 large green pepper, seeded and cut in 1 inch squares<br \/>  1 large red pepper, seeded and cut in 1 inch squares<br \/>  cooked rice (optional)<\/span><br \/>  <\/span><\/p>\n<p><span style=\"font-family: Tahoma\"><span style=\"font-size: medium\"><span style=\"color: rgb(255,153,0)\">PREPARATION<\/span><\/span><\/p>\n<p>  <\/span><span style=\"font-size: small\"><span style=\"font-family: Tahoma\">Dredge the meat chunks in flour, shaking off any excess. Brown the meat<br \/>  in the oil over high heat in a Dutch oven or heavy 4 quart pot. Add more<br \/>  oil if needed. Return meat to the pot: add wine, stock, onions, carrots, garlic, soy sauce, crushed red pepper, sugar, and ginger. Bring to a boil, then lower heat, cover and simmer for 1 hour. Near the end of the simmering hour, remove the skin from the tangerines in as large pieces as possible, reserving the fruit. Lay the peel, outer side down, on a hard surface and using the edge<br \/>  of a sharp knife or grapefruit spoon, scrape off as much white pith as<br \/>  possible. Cut the scraped peel into 1\/2 inch squares and add them to the<br \/>  pot. Simmer for 30 more minutes. Add the peppers and simmer for another 15 minutes. Separate the reserved tangerine sections and peel off as much white pith as possible. Make a small slit in the inner edge of any section with seeds<br \/>  and pop the seeds out through the slit. Add the tangerine sections to the<br \/>  pot and heat through for 5 minutes.
