{"id":41336,"date":"2012-10-20T02:33:00","date_gmt":"2012-10-20T02:33:00","guid":{"rendered":"https:\/\/www.halegroves.com\/blog\/recipe\/ortanique-rum-cake\/"},"modified":"2022-02-11T12:03:05","modified_gmt":"2022-02-11T12:03:05","slug":"ortanique-rum-cake","status":"publish","type":"cuisine-recipe","link":"https:\/\/www.halegroves.com\/blog\/recipe\/ortanique-rum-cake\/","title":{"rendered":"Ortanique Rum Cake Recipe"},"content":{"rendered":"<p>Offer a taste of the tropics at your next gathering &#8211; try an Ortanique Rum Cake.&nbsp; Before you even check out the recipe, you may be thinking&#8230;&#8217;WHAT is an ortanique??&#8217;&nbsp; Ortaniques are a specialty citrus of the tangor family.&nbsp; Tangors are the result of crossing a mandarin orange (better known as a tangerine) with a sweet orange.&nbsp; Ortaniques are one of the sweetest, most flavorful tangors available.&nbsp; Ortaniques were originally discovered in Jamaica, so it seems only natural to pair ortaniques with Jamaica&#8217;s other famous export:&nbsp; rum.&nbsp; Together, ortaniques and Jamaican rum make a dessert that is sure to please:<\/p>\n<p>  Cake Ingredients<br \/>  2 sticks unsalted butter, softened<br \/>  1 1\/2 cups granulated sugar <br \/>  4 eggs, separated<br \/>  2 2\/3 cup all-purpose flour<br \/>  2 1\/2 teaspoons baking powder <br \/>  1\/2 teaspoon salt<br \/>  1\/4 teaspoon baking soda<br \/>  1\/4 teaspoon ground ginger<br \/>  1 cup sour cream mixed <br \/>  2 tablespoons Jamaican rum<br \/>  2 tablespoons ortanique zest<br \/>  1 teaspoon pure vanilla extract<br \/>  1 1\/4 cup finely chopped pecans<br \/>  4 egg whites, beaten stiff<\/p>\n<p>  Sauce Ingredients<br \/>  1 cup granulated sugar<br \/>  Juice of one ortanique<br \/>  1\/2 cup Jamaican Rum<\/p>\n<p>  Preheat oven to 350 degrees.&nbsp; Grease and flour tube cake pan.&nbsp; In the large bowl of an electric mixer, cream butter and sugar until very light and fluffy, about 10 minutes.&nbsp; Add egg yolks one at a time, fully incorporating after each addition.&nbsp; In separate bowl, combine next five ingredients.&nbsp; Sift twice.&nbsp; In another bowl, mix together sour cream, rum, ortanique zest and vanilla.&nbsp; With mixer on low speed, add the flour mixture to the butter mixture in three portions, alternating with the sour cream mixture.&nbsp; When fully combined, mix on high speed for one minute.&nbsp; Add pecans and fold in the meringue.&nbsp; Spread batter in prepared cake pan and place in oven.&nbsp; Lower oven temperature to 325 degrees and bake for 1 hour and 15 minutes or until cake tester comes out clean. &nbsp;<\/p>\n<p>  While cake is baking, make sauce.&nbsp; In a small saucepan combine sugar, ortanique juice and Jamaican rum.&nbsp; Heat on low just until sugar is dissolved.&nbsp; Set aside.<\/p>\n<p>  When cake is finished, remove from oven.&nbsp; Allow to cool for ten minutes and then, while cake is still in the pan, poke holes in the cake with a two tined fork.&nbsp; Slowly pour sauce over cake until absorbed.&nbsp; Allow cake to fully cool in the pan (even overnight).&nbsp; When cool, invert on to your favorite cake plate or platter.&nbsp; This is a very moist cake and keeps well.<\/p>\n<p>  &nbsp;<\/p>\n","protected":false},"author":1,"featured_media":0,"menu_order":0,"comment_status":"open","ping_status":"open","template":"","tags":[],"cuisine-recipe-category":[55],"cuisine-recipe-course":[],"cuisine-recipe-cuisine":[],"class_list":["post-41336","cuisine-recipe","type-cuisine-recipe","status-publish","hentry","cuisine-recipe-category-desserts"],"acf":[],"_links":{"self":[{"href":"https:\/\/blog2.halegroves.com\/wp-json\/wp\/v2\/cuisine-recipe\/41336","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/blog2.halegroves.com\/wp-json\/wp\/v2\/cuisine-recipe"}],"about":[{"href":"https:\/\/blog2.halegroves.com\/wp-json\/wp\/v2\/types\/cuisine-recipe"}],"author":[{"embeddable":true,"href":"https:\/\/blog2.halegroves.com\/wp-json\/wp\/v2\/users\/1"}],"replies":[{"embeddable":true,"href":"https:\/\/blog2.halegroves.com\/wp-json\/wp\/v2\/comments?post=41336"}],"wp:attachment":[{"href":"https:\/\/blog2.halegroves.com\/wp-json\/wp\/v2\/media?parent=41336"}],"wp:term":[{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/blog2.halegroves.com\/wp-json\/wp\/v2\/tags?post=41336"},{"taxonomy":"cuisine-recipe-category","embeddable":true,"href":"https:\/\/blog2.halegroves.com\/wp-json\/wp\/v2\/cuisine-recipe-category?post=41336"},{"taxonomy":"cuisine-recipe-course","embeddable":true,"href":"https:\/\/blog2.halegroves.com\/wp-json\/wp\/v2\/cuisine-recipe-course?post=41336"},{"taxonomy":"cuisine-recipe-cuisine","embeddable":true,"href":"https:\/\/blog2.halegroves.com\/wp-json\/wp\/v2\/cuisine-recipe-cuisine?post=41336"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
