Salmon Fillets, pin bones removed<br \/>\nOlive Oil<br \/>\nSalt and Freshly Ground Pepper<br \/>\nFresh Cilantro Leaves<\/p>\n<p>METHOD:<br \/>\nPreheat barbeque grill on medium-high heat. Brush lightly with olive oil; sprinkle with salt and pepper. Grill salmon flesh side down slightly till opaque in center, about 5 minutes per side. Serve immediately with peach salsa on the side. Sprinkle with cilantro as garnish.<\/p>\n<p>Peach Salsa:<br \/>\n2 <a href=\"https:\/\/www.halegroves.com\/peaches\/c\/ft_1001_24\/\">Large Ripe Peaches<\/a>, about 1 lb., peeled and pitted<br \/>\n1 Tbs. Fresh Lemon or Lime Juice<br \/>\n2 Medium Tomatoes, peeled and seeded (if not in season, use Cherry Tomatoes, quartered)<br \/>\n6 Large Green Onions, chopped<br \/>\n1 Tbs. Jalapeno Pepper, chopped<br \/>\n1 Tbs. Cilantro, minced<br \/>\n4 Tbs. good quality Olive Oil<br \/>\n2 Tbs. Sherry Vinegar<br \/>\n2 tsp. Honey<\/p>\n<p>METHOD:<br \/>\nCut the peaches into medium dice and toss with lemon juice. Cut the tomatoes into medium julienne strips.<\/p>\n<p>Combine <a href=\"https:\/\/www.halegroves.com\/peaches\/c\/ft_1001_24\/\">peaches<\/a> and tomatoes. Add green onions, jalapeno pepper, and cilantro. Mix. Whisk together oil, vinegar, and honey and pour over the other ingredients.<\/p>\n<p>Serve with a slotted spoon, allowing most of the juice to drain off.<\/p>\n<p>Note: May leave unrefrigerated for several hours.
