Hearty salads make light and satisfying lunches, side dishes, and even main entrees when the temperature creeps up, and this one incorporates the tail end of winter citrus season for a bright, flavorful dish that\u2019s both healthy and satisfying.<\/p>\n<p>Sliced avocado, almonds and feta cheese provide heart-healthy omega-3 fats, while filling, nutritious lentils are packed with dietary fiber and potassium. Our farm-fresh <a href=\"https:\/\/www.halegroves.com\/citrus\/c\/citrus-fruit\/\">Ruby Red Grapefruit and seedless Navel Oranges<\/a> add tangy-sweet, vibrant flavor and color to your diet along with a host of health benefits from the vitamins and minerals they provide, including immune-boosting vitamin C.<\/p>\n<h3><strong>Ingredients:<\/strong><\/h3>\n<h4><em>For the salad:<\/em><\/h4>\n<ul>\n<li>1 <a href=\"https:\/\/www.halegroves.com\/grapefruit\/c\/ft_1001_12\/\">Ruby Red Grapefruit<\/a>, <em>halved<\/em><\/li>\n<li>1 <a href=\"https:\/\/www.halegroves.com\/navel-oranges\/c\/ft_1001_7\/\">Navel Orange<\/a>, <em>peeled and sliced<\/em><\/li>\n<li>2 c. cooked lentils<\/li>\n<li>1 5 oz. package of mixed greens<\/li>\n<li>1 avocado, sliced<\/li>\n<li>4 oz. feta cheese, <em>cubed<\/em><\/li>\n<li>\u00bd c. slivered almonds<\/li>\n<li>2 Tbsp. fresh mint, <em>chopped<\/em><\/li>\n<\/ul>\n<h4><em>For the dressing:<\/em><\/h4>\n<ul>\n<li>Juice from 1\/2 grapefruit, about 1\/4 cup<\/li>\n<li>\u00bc c. olive oil<\/li>\n<li>1 Tbsp. honey<\/li>\n<li>1 tsp. Dijon mustard<\/li>\n<li>Salt &amp; pepper, <em>to taste<\/em><\/li>\n<\/ul>\n<h3><strong>Directions:<\/strong><\/h3>\n<ol>\n<li>Peel and slice one grapefruit half and toss together with greens, orange slices, avocado slices, feta cheese cubes, chopped mint and slivered almonds in a large salad bowl and refrigerate.<\/li>\n<li>Juice remaining grapefruit half (should yield about \u00bc cup of juice). Whisk juice together with olive oil, honey, Dijon mustard and salt and pepper in a small bowl until smooth.<\/li>\n<li>When ready to serve, add dressing to salad and toss together gently.
