Kid Friendly Desserts Made From Indian River Citrus Fruit

Make Your Own Orange Cupcakes – These treats are easy to make and they are a huge hit with kids at parties. You can even make these instead of having a traditional cake. Get a white cake mix, or a chocolate one if you want to create a really flavorful dessert. Instead of preparing the cake mix with water use fresh squeezed Indian River orange juice. Then pour the cake mix into individual flat bottomed ice cream cones and place on a baking sheet. In order to keep the ice cream cones standing up straight you can use a disposable muffin tin with the bottoms of each individual cup cut out. Place the ice cream cones in the tin and the tin should keep them upright during baking.
After they cook take them out and let them cool completely. Set up a “decoration bar” for the kids with candied orange and grapefruit peel, light cream cheese frosting, sprinkles, fresh berries, and other toppings. Let the kids design and create their own orange cupcakes.
Grapefruit slush- This great dessert can be served in a glass of juice or in a bowl with bits of fruit or crunch nuts. Boil together Indian River grapefruit juice and sugar to make a simple syrup.
