Grapefruit Creme Recipe

INGREDIENTS

1 ¼ cups Hale grapefruit juice, divided
1 envelope unflavored gelatin
5 packets low-calorie sugar substitute
1 cup ice water
1 cup frozen non-dairy whipped topping, thawed
Hale grapefruit, peeled and sectioned
½ cup red seedless grapes cut in half

PREPARATION

In small saucepan combine gelatin and ½ cup juice; let stand 1 minute.  Stir over medium heat until gelatin dissolves, about 5 minutes.  Remove from heat; stir in remaining ¾ cup juice, sugar substitute and the ice water.  Place saucepan in bowl filled with ice and stir until mixture starts to thicken.  Fold grapefruit mixture into four individual dishes or glasses.  Chill at least 1 hour.

YIELD:  4 servings.  250 calories per serving.
