Grilled Grapefruit and Pork Skewers Recipe

INGREDIENTS

1 whole port tenderloin, about ¾ pound
¼ cup soy sauce
¼ cup firmly packed dark brown sugar
¼ cup freshly squeezed lemon juice
2 tablespoons dry sherry
1 tablespoon grated fresh gingerroot
1 garlic clove, minced
1 grapefruit

PREPARATION

Cut the pork into 1-inch cubes and place them in a bowl.  Combine the remaining ingredients, except the grapefruit and pour them over the pork.  Cover and marinate for 1 hour. Slice the unpeeled grapefruit into 12 sections and halve each section. Thread the pork cubes alternately with the grapefruit pieces (piercing them through the skin) onto 8 skewers.  Reserve the marinade. Grill over hot coals or broil, turning and basting often with the reserved marinade, for about 15 minutes or until cooked thoroughly.

YIELD: 4 servings.  Preparation time:  1 hour 30 minutes
