Mona Lisa Sorbet Recipe

INGREDIENTS

2 packets low calorie sugar substitute
1 envelope unflavored gelatin
2 ¾ cup Florida grapefruit juice, divided
¼ cup bitter liqueur (Campari)
3 red
Florida grapefruit
Fresh mint leaves (optional)

PREPARATION

In medium saucepan, combine sugar substitute and gelatin. Add ¾ cup grapefruit juice. Stir over low heat 3 minutes, or until gelatin is dissolved. Remove from heat; stir in remaining 2 cups grapefruit juice and liqueur. Pour into a 9 inch square metal pan; cover, place in freezer. When almost frozen, scrape into a chilled mixing bowl or container of food processor. Beat until smooth but still icy. Return to pan; cover; freeze until firm. Repeat procedure one more time.

To serve, cut grapefruit in half; loosen sections with a knife. Top each grapefruit with 2 small scoops of sorbet.
Yield:  12 – 16 (1/2 cup) servings
