INGREDIENTS
1 pastry shell 9-inch, baked
1 envelope unflavored gelatin
½ cup hale red grapefruit juice
1 pint vanilla ice cream, melted
2 egg whites
2 tablespoons sugar
2 cups Hale red grapefruit sections, cut in pieces
½ cup heavy cream, whipped (optional)
1 cup Hale red grapefruit sections (optional)
PREPARATION
Prepare pastry shell.
In a small saucepan, mix gelatin with grapefruit juice. Let stand 1 minute. Stir over low heat until gelatin is completely dissolved. Remove from heat. Stir in ice cream. Chill. Stirring occasionally, until mixture is the consistency of unbeaten egg whites. In medium bowl, beat egg whites until soft peaks form; gradually add sugar and beat until stiff. Fold into gelatin mixture. Fold in grapefruit sections. Turn into prepared pastry shell. Chill until firm.
Garnish with additional grapefruit sections and whipped cream, if desired.
Yield: 1 9-inch pie.
