Spirited Grapefruit Parfaits Recipe

INGREDIENTS

2/3 cup heavy cream
1/3 cup liqueur (hazelnut, almond, anise, or orange flavored)
1 tablespoon butter or margarine
1/3 cup chopped hazelnuts or sliced almonds
2
red Florida grapefruit, peeled and sectioned

PREPARATION

In small mixing bowl combine heavy cream and 1 tablespoon liqueur.  Chill 30 minutes.  In small bowl combine remaining liqueur and grapefruit sections; let stand 30 minutes.  Meanwhile, melt butter in small skillet over medium heat; add nuts and stir until lightly toasted.  Turn out onto paper toweling to cool.  Whip cream until stiff peaks form.  In 4 parfait, dessert dishes or large wine glasses, arrange half the grapefruit sections; top with half the cream and nuts.  Repeat layers ending with nuts.

YIELD:  4 servings.
