Recipes Using Sweet Georgia Peaches

One really doesn’t need a recipe for sweet Georgia peaches. They are simply delicious and a pleasure to eat right out of hand. However, if you’re looking for a special summer treat, you may want to consider one of these simple recipes:

Preparing peaches to use in various recipes is easy. With a sharp knife, score a shallow ‘X’ in the bottom of each peach. Fill a large bowl with ice water and set aside. Drop three to four peaches in a pot of boiling water for 30-60 seconds. Remove and place in ice bath. When peaches are cool enough to handle, slip the peeling off. Peaches can then be sliced or chopped as dictated by your recipe.

For a great tasting, easy to prepare dessert or side dish, consider grilling your sweet Georgia peaches. Peeling is not necessary for grilled peaches. Simply cut the peaches in half and remove the pit. Brush both sides with melted unsalted butter. Heat grill to medium low and place peaches on the hot grill. Cover and grill until soft and charred, about four to five minutes per side. Grilled peaches are delicious served with rich vanilla ice cream for dessert. However, they meld just as well with savory dishes and are quite tasty served alongside grilled chicken or pork. Grilled peaches can also be chopped and incorporated into fresh salsa.

Another savory option for sweet Georgia peaches is Savory Peach Glaze. This glaze is the perfect accent for roasted turkey or pork. In a medium saucepan, saut? 1/2 cup chopped onion in one tablespoon of olive oil. When onion is translucent, add 1 1/2 cups of sliced sweet Georgia peaches, two tablespoons of your favorite honey, one teaspoon of Worcestershire sauce and one tablespoon of brown sugar. Bring to a boil. Reduce to low and simmer until peaches soften and glaze thickens. Glaze can be basted on to turkey or pork during the last ten minutes of roasting time. The remaining glaze can be served as a dipping sauce with the meal.

For a refreshing summer beverage that adults will love, try Sweet Georgia Peach Sangria. Cut two large peaches into wedges, discard pit. Place peaches in a large pitcher and add 1/2 cup peach schnapps and 1/3 cup superfine sugar. Allow to macerate for approximately one hour. Add one 750 ml bottle of your favorite chilled rose` wine and two cups of chilled sparkling water or club soda. Pour into ice-filled goblets and serve.
