INGREDIENTS
1 broiler-fryer chicken, about 3 pounds, quartered
1 cup Florida grapefruit juice
1 clove garlic, minced
2 tablespoons chopped fresh coriander (cilantro)
2 teaspoons honey
½ teaspoon salt
1/8 teaspoon cayenne pepper
1 tablespoons cornstarch
2 Florida grapefruit, peeled and sectioned
¼ cup chopped green onion
PREPARATION
In a large, shallow, microwave-safe dish (13×9-inch), arrange chicken quarters with meatiest portions toward outside of the dish. Cover with plastic wrap. Cook on HIGH 8 minutes; rotate dish ½ turn. Cook 8 minutes longer. Remove from oven; let stand while preparing sauce. In 2-cup glass measure, combine grapefruit juice, garlic, coriander, honey, salt and cayenne; whisk in cornstarch until well blended. Cook on HIGH 2 minutes longer, until clear and thickened. Add grapefruit sections and green onion to sauce; cook 30 seconds, just to heat through. Arrange chicken on serving platter; pour sauce over chicken.
YIELD: 4 servings. (Recipe prepared in 600-700 watt microwave oven.)
