Super-easy to make, this refreshing dessert is especially pretty when baked in a Bundt pan and sprinkled with powdered sugar. Enjoy it plain with coffee or tea, or top it with whipped cream and orange slices for a lovely springtime or Easter dessert!

Ingredients:

  • 3 c. flour
  • 2 tsp. baking powder
  • 2 c. sugar
  • 1 c. butter, softened
  • 1 tsp. vanilla
  • 5 large eggs, at room temperature
  • 1 c. orange juice, at room temperature

Directions:

  1. Preheat oven to 350°F.
  2. In a large bowl, blend together flour, baking powder and sugar. In a separate bowl, mix together orange juice, butter, sugar and vanilla. Add eggs one at a time and mix well. Slowly stir in dry ingredients until blended.
  3. Add mixture to a greased and floured Bundt cake pan and bake for 60 minutes or until a toothpick inserted in the center comes out clean.
  4. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely, about 20 more minutes.
  5. Transfer cake to a serving platter and sift powdered sugar over top.
