Got apples and pears to use up? This healthy cake is perfect for dessert or with your morning coffee! No eggs or butter necessary…it’s moist and flavorful thanks to the fruit inside. Chopped pecans give it a bit of crunch, while fragrant cinnamon adds a taste of autumn.
Ingredients:
3 Hale Groves Orchard Apples, peeled, cored and chopped
3 Hale Groves Pears (any variety), peeled, cored and chopped
2 c. flour
½ c. white sugar
1 Tbsp. baking powder
½ tsp. baking soda
½ tsp. salt
2 tsp. cinnamon
½ c. pecans, chopped
1 c. milk
1 Tbsp. brown sugar
2 tsp. powdered sugar, for dusting
Directions:
- Pre-heat oven to 350°F and spray a 9″x13″ glass baking dish with cooking spray.
- Put flour, white sugar, baking powder, baking soda, salt and cinnamon in a large bowl and whisk together; add milk and mix again.
- Stir in pecans, apples and pears; pour into baking dish and spread batter evenly. Sprinkle brown sugar over top of batter.
- Bake 30 minutes or until a toothpick inserted in center comes out clean. Let cool 15 minutes, then dust with powdered sugar.
