INGREDIENTS
2/3 cup sugar
1 envelope unflavored gelatin
¼ cup cold water
½ cup boiling water
Juice of one lemon
1 cup Hale orange juice
1 teaspoon orange flavored liqueur (if desired)
1 cup heavy cream, whipped
1 loaf Angel Food cake
Fresh Hale orange sections
PREPARATION
Soak gelatin in cold water for 5 minutes. Add the boiling water and stir until dissolved. Add lemon juice, Hale orange juice, sugar, and orange liqueur. Mix well and chill in refrigerator until just slightly thickened. Fold in cream. Break cake into pieces and place in square pan. Pour sauce over cake pieces and chill in freezer. Place cake in refrigerator at least one hour before serving. Cut into squares and serve with Hale orange sections.
YIELD: 6-8 servings.
