INGREDIENTS
1 ¼ cups all purpose flour
1 tablespoon baking powder
½ teaspoon salt
¼ teaspoon ginger
½ cup sugar
1 ½ cups All-Bran cereal
¾ cup milk
½ cup orange juice
1 teaspoon grated Hale orange rind
1 egg
1/3 cup melted margarine
PREPARATION
Stir together flour, baking powder, salt, sugar, and ginger. Set aside. Measure All-Bran cereal and milk, orange juice, and grated rind into mixing bowl. Let stand 2 minutes. Add egg and margarine. Beat well. Add flour mixture, stirring only until combined. Divide batter into greased muffin pan. Bake in preheated oven at 400 degrees about 25 minutes, or until brown. Serve warm.
YIELD: 12 muffins.
