INGREDIENTS
2 teaspoons finely shredded Florida orange peel
1 cup Florida orange juice
1 cup regular or low-calorie cranberry juice cocktail
2 tablespoons sugar
8 inches stick cinnamon, broken
4 whole cloves
1 cup cranberries
8 Florida oranges, peeled, sliced and seeded
Fresh mint sprig (optional)
PREPARATION
In a saucepan combine orange peel, orange juice, cranberry juice, sugar, cinnamon, and cloves.? Bring to boiling; reduce heat.? Cover and simmer for 10 minutes.? Remove spices; discard.? Add cranberries.? Return to boiling; reduce heat and simmer, uncovered, about 5 minutes or until cranberries begin to pop.? Arrange orange slices in a large serving bowl.? Spoon cranberry mixture over oranges.? Serve at room temperature or cover and chill before serving.? If desired, garnish with mint.
