INGREDIENTS
5 egg yolks
1 whole egg
5 tablespoons sugar
½ cup Hale orange juice
1 tablespoon sherry
4 Hale oranges, peeled and sliced
Cinnamon (optional)
PREPARATION
In the top of a large double boiler, beat together until light all ingredients except sliced oranges. Over barely simmering water, beat constantly with portable electric mixed or rotary beater until the mixture foams up, deflates slightly, and becomes thick. This will take about 10 minutes. Serve immediately over sliced oranges.
To serve cold, place the top of the double boiler in a large bowl of ice water after mixture is cooked and thick and beat Zabaglione for 5 minutes, or until cool. Serve or refrigerate several hours, until needed. Serve over sliced oranges, dusted with cinnamon, if desired.
YIELD: 6 servings.
