INGREDIENTS
1 pound ground pork
½ cup chopped onion
1 clove garlic, minced
3 tablespoons flour
1 ½ cups fresh Hale orange juice
1 ¼ teaspoons salt, divided
½ teaspoon sugar
¼ teaspoon pepper, divided
4 ounces lasagna noodles (cooked according to package directions)
1 pound (2 cups) creamed cottage cheese
1 egg, beaten
¼ cup chopped parsley
½ teaspoon grated Hale orange rind
1/8 teaspoon sage
¼ teaspoon cinnamon
PREPARATION
In a large skillet, break up pork with fork and cook, stirring over medium heat until browned. Add onion and garlic and cook, stirring until soft. Blend in flour and add orange juice, 1 teaspoon salt, sugar, 1/8 teaspoon pepper, sage and cinnamon. Cook, stirring until mixture thickens and comes to a boil. Remove from heat. In medium bowl, mix cottage cheese, egg, parsley, orange rind and remaining ¼ teaspoon salt and 1/8 teaspoon pepper.
Place a layer of half of lasagna noodles on bottom of 11 x 7 baking dish. Spoon half of cheese mixture over noodles, and then half of pork mixture over cheese. Repeat with remaining lasagna noodles, cottage cheese and pork mixtures. Bake uncovered in 350 degree oven for 30 minutes. Garnish with orange slices.
YIELD: 6 servings.
Note: You can assemble the dish ahead of time, and then cook it for a few minutes more at 350 degrees.
