Apple Pecan Raisin Salad

Here’s a light, fresh, and festive appetizer! Based on the famous Waldorf salad, this creamy, crunchy version uses pecans instead of walnuts and raisins instead of grapes. Perfect for lunch or a light snack, you can even swap out the raisins for dried cranberries for the holidays.

Ingredients:

5 Hale Groves Orchard Fresh Apples

3 Tbsp. lemon juice, freshly squeezed

½ c. celery, thinly sliced

½ c. pecans, coarsely chopped

½ c. raisins

? c. mayonnaise

Lettuce leaves, for serving

Directions:

Wash apples and cut into ½” cubes (unpeeled). Sprinkle with fresh lemon juice. Combine with celery, pecans, raisins, and mayonnaise in large bowl and gently mix. Add more mayonnaise if desired. Serve on lettuce leaves with lemon wedges for garnish if desired.
