Florida’s Microwave Flounder Recipe

INGREDIENTS

2 Florida grapefruit, peeled and sectioned
1 small carrot, shredded
1 small zucchini, shredded
½ cup herb seasoned stuffing mix
4 flounder fillets (6 ounces each)
Garlic salt and pepper to taste
1 medium tomato, cut into 8 thin slices (divided)

PREPARATION

Reserve 4 grapefruit sections for garnish; coarsely chop remaining sections.  Combine chopped grapefruit with carrot, zucchini and stuffing mix.  Season flounder with garlic salt and pepper.  On one end of each flounder fillet, lay a tomato slice.  Mound stuffing on tomato; fold other end of filet over the stuffing.  In a microwave-safe oblong baking dish, arrange fish with the fold towards the corners of the dish.  Cover with plastic wrap and microwave on HIGH 6 to 7 minutes, or until fish is just tender, rotating dish once if necessary.  Top each with a remaining tomato slice and a reserved grapefruit section.  Cover and let stand 3 minutes.

YIELD:  4 servings.  242 calories per serving.  (Recipe prepared in 600-700 watt microwave oven.)
