Ingredients

For the Peach Salsa:

  • 1 Roma tomato, seeded and diced
  • 1 jalapeño pepper, seeded and finely chopped
  • ¼ cup red onion, chopped
  • ¼ cup fresh cilantro, chopped

For the Salmon:

  • 4 salmon fillets, skins on
  • 2 teaspoons extra virgin olive oil
  • 1½ teaspoons ground cumin
  • Salt and freshly ground black pepper, to taste

Directions

  1. Make the salsa: Combine diced peaches, tomato, jalapeño, onion, cilantro, lime juice, and salt in a bowl. Cover and chill in the refrigerator for at least 2 hours to let the flavors develop.
  2. Prep the salmon: Brush both sides of the salmon fillets with olive oil. Sprinkle with ground cumin, salt, and pepper.
  3. Preheat the grill: Spray grill plates with olive oil cooking spray and preheat grill to medium heat.
  4. Grill the salmon: Place salmon fillets skin-side up on the grill. Grill for 3-4 minutes, then flip. Grill an additional 3-4 minutes or until the fish flakes easily with a fork.
