We all know that salads are good for us, and including a salad with meals, or even making a full lunch from salad, can be a healthful habit. But as anyone who eats salads often might tell you, always using the same salad ingredients can become tiresome to the taste buds. This Grapefruit, Goat Cheese, and Fennel Salad will surely provide a welcomed twist to any salad routine.

The tart flavor of fresh Grapefruit combined with creamy, tangy goat cheese and sweet, crisp fennel makes for a complex but delicious salad. Pine nuts and a home made dressing complete the easy preparation and will make this salad a favorite of all who taste it. Gather the fresh ingredients and toss together this Grapefruit, Goat Cheese, and Fennel Salad that is perfect for a dinner side, a light lunch, or anytime you need a fresh take on the tried and true house salad.


3 Tbs Extra Virgin Olive Oil
2 Tbs Lemon Juice
1 Small Shallot, minced
1 tsp Dried Oregano
Salt and Pepper
2 Medium Fennel Bulbs, halved and sliced thin
1 Medium Grapefruit, peeled, seeded, and cut into segments
1/3 Cup Kalamata Olives, pitted and chopped
2 Ounces Crumbled Goat Cheese
2 Tbs Toasted Pine Nuts


Make the dressing first. Using a mixing bowl add olive oil, lemon juice, shallots, and oregano and whisk to combine. Season to taste with salt and pepper and set aside.

In a salad bowl combine fennel, olives, and half of the dressing and toss to blend. Add grapefruit, goat cheese, pine nuts, and remaining dressing and gently toss to combine. Serve immediately and enjoy this tasty salad.
