Ingredients
3 Tbs Extra Virgin Olive Oil
2 Tbs Lemon Juice
1 Small Shallot, minced
1 tsp Dried Oregano
Salt and Pepper
2 Medium Fennel Bulbs, halved and sliced thin
1 Medium Grapefruit, peeled, seeded, and cut into segments
1/3 Cup Kalamata Olives, pitted and chopped
2 Ounces Crumbled Goat Cheese
2 Tbs Toasted Pine Nuts
Directions
Make the dressing first. Using a mixing bowl add olive oil, lemon juice, shallots, and oregano and whisk to combine. Season to taste with salt and pepper and set aside.
In a salad bowl combine fennel, olives, and half of the dressing and toss to blend. Add grapefruit, goat cheese, pine nuts, and remaining dressing and gently toss to combine. Serve immediately and enjoy this tasty salad.
