Mango is a sweet, creamy tropical fruit cultivated thousands of years ago in South Asia. People from that side of the world have been enjoying this delightful treat long before it reached the United States.

There are more than 1000 mango varieties to choose from. Each variety differs in color, shape, size, taste and texture. Whichever variety, whether it is unripe or ripe, the mango is a great tasting summer fruit that can be eaten fresh and out of your hand or as a ingredient for different recipes.

One example of the many recipes that make use of mangos is Mango bread. It is a popular American cuisine that uses mango, eggs, sugar, salt, butter, baking powder, shortening and nuts as the main ingredients. Depending on the location, the preparation and ingredients sometimes varies. Some add vanilla extract, some ground cinnamon, but no matter what is added Mango bread is something everyone can enjoy.

How to make Mango Bread

Ingredients?

2 cups all-purpose flour

2 teaspoons baking soda

1/2 teaspoon salt

2 teaspoons ground cinnamon

1/2 cup butter, softened

1/2 cup vegetable oil

1 1/2 cups white sugar

3 eggs

1 teaspoon vanilla extract

3 cups peeled, seeded and chopped Hale Florida Mangos

1/2 cup raisins

1/2 cup chopped walnuts

1/2 cup shredded coconut

Directions?

  1. Preheat oven to 350?F. Meanwhile, grease and oil two 9×5-inch loaf pans.
  2. Using a large bowl, mix flour baking soda, salt and cinnamon. In a different large bowl. Whisk butter, oil and sugar until light and fluffy. Add eggs one at a time, beating well with each addition. Add in vanilla extract. Combine the two mixtures. Fold in the mangos, walnuts, raisins and coconuts until they are evenly combined.
  3. Set aside for 20 minutes then bake for 60 minutes or until the toothpick stuck in the center of the loaf comes out clean.
