Orange Nut Cake Recipe

INGREDIENTS

1 cup macadamia nuts
1 ½ cups sugar
½ teaspoon salt
1 tablespoon grated Hale orange rind
6 eggs, separated
1 ¾ cups, sifted flour
1/3 cup orange juice

PREPARATION

Finely grind macadamia nuts in blender.  Beat egg whites until foamy.  Gradually add ½ cup of sugar and continue beating until stiff peaks form.  Set aside. Beat egg yolks until thick and lemon colored.  Gradually beat in 1 cup sugar, and then blend in flour and salt alternately with the orange juice.  Stir in the orange rind.  Fold in the beaten egg whites then gently fold in the ground macadamia nuts.

Pour into an ungreased 10-inch tube pan.  Bake at 350 degrees for 40 minutes or until top springs back when touched lightly with finger.  Invert cake and cool completely.  Spread cake with Orange Glaze.*
YIELD: 12 servings.

Orange Glaze*

1 cup confectioners sugar
1 ½ teaspoon grated Hale orange rind
2 tablespoons
Hale orange juice

Mix all ingredients until smooth.
