Refreshing Summer Citrus Desserts

In the heat of summer rich, heavy desserts like chocolate cake are just too much. Keep your family cool by enjoying light citrus desserts in the summer. Whether you are making dessert for one hundred people at a family picnic or barbecue or just enjoying a light dinner with friends and family in the backyard these citrus treats will delight your friends and family. Make sure that you keep a large assortment of fresh citrus fruit on hand so that you have plenty of citrus fruit to cook with.

Citrus Angel Food Cake – Angel Food cake is a great summer cake because it is so light and airy. Delicate Angel Food cake can only be made better by one thing- citrus fruit. Add a layer of fresh orange marmalade to the top of an Angel Food cake and then top with whipped cream and candied orange peel pieces. You will instantly have a delicious, refreshing and elegant cake perfect for summer birthday parties, weddings, and anniversary parties.

Citrus sorbet – Light sorbet is another perfect summer time treat. Cool and sweet sorbet is lighter than ice cream, and lower in calories. To make a delicious, pink sorbet mix sugar, fresh grapefruit juice and a little mint together. Boil them, and then freeze. That’s all it takes to make healthy, low calorie, sweet dessert that was made for hot summer nights. If the tangy sweetness of fresh grapefruit is not to your taste then make a cool orange sorbet by mixing fresh orange juice and sugar.

Creamsicle ice cream – This homemade ice cream can be made by hand or in an ice cream mixer. All you need to do is mix heavy cream, sugar, and fresh orange juice together. Beat thoroughly, and freeze. You can also make this with grapefruit juice, or a mix of orange and grapefruit juice. For a super sweet treat make it with frozen Honeybell Tangelo juice.

Florida orange parfait – This is a very easy dessert to make so it is a great dessert to make if you have kids because they can make their own or help you make it. Whip some whipped cream with orange or lemon gelatin powder and fresh Florida orange juice to make the filling. Let it chill thoroughly so it has a mousse like consistency. Layer more whipped cream in a parfait glass and alternate layers of plain whipped cream and the orange filling. Top with fresh orange segments or candied orange peel and you have a luscious, cool, low calorie summer dessert.
