Everglades Punch Recipe



2 cups water
1 cup sugar
1 cup packed, fresh mint leaves
1 quart Hale Grapefruit juice
1 cup seltzer or club soda
Molded ice ring or ice cubes
Hale grapefruit slices, halved
fresh mint


In small saucepan, combine water and sugar, boil 5 minutes. Add mint leaves and boil 5 to 10 minutes longer, or until mixture becomes light green and has reduced to 1 1/2 cups liquid. Remove from heat. Cool to room temperature. Strain syrup. Refrigerate.

To make punch: In large punch bowl, combine grapefruit juice, 1 1/2 cups syrup and seltzer; add ice ring or ice cubes, grapefruit slices and mint leaves.

YIELD: 12 servings (about 8 cups)
