Ingredients
4 Cups Sugar
8 Cups of peeled and chopped Bartlett Pears
1 tsp ground Cinnamon
1/4 tsp ground cloves
Canning pot, tongs, and 6 half-pint canning jars with lids.
Directions
In a large stockpot with thick bottom, combine chopped pears, sugar, cinnamon, and ground cloves. Bring to a boil while stirring. Reduce heat to simmer with the lid off for 1 ½ to 2 hours until thickened. Be sure to stir frequently to prevent sticking.
Remove from heat, scoop off any foam, and stir well. Fill into half-pint canning jars but leave about ¼ inch of space at the top. Cover with canning lids and cook in a boiling water canner for 10 minutes. Carefully remove jars with canning tongs and allow to cool. Store refrigerated.
