Ingredients

4 Tbs Olive Oil, divided

1 tsp honey

4 ripe Plums, halved and pitted

1 Lemon, halved and seeded

4 Bone-In Pork Chops, 1-inch thick

8 ounces Halloumi Cheese, cut lenthgwise into ½-inch thick slices.

2 Tbs Oregano Leaves, chopped

Directions

Oil grill grates and heat grill to medium-high heat. In a plastic food storage bag combine honey, 1 tablespoon olive oil, pork chops, and salt and pepper to season. Seal bag, turn to mix, and refrigerate while preparing plums.

Arrange plums, lemon, and cheese on a baking sheet, drizzle with 2 tablespoons of olive oil, and toss to coat. Lightly season the plums, lemon, and cheese with a sprinkling of salt and pepper. Set aside.

Grill the pork chops for about 7 minutes, turning a few times, until browned and to an internal temperature of 130ºF. Remove from grill to a clean platter. Grill plums, lemons, and cheese for about 5 minutes, turning each twice. Transfer plums, lemons, and cheese to cutting board, cut plums into 3 or 4 slices each, and cut cheese into 1-inch chunks.

Serve chops topped with plums, cheese, and oregano then drizzled with the grilled lemon juice. Enjoy.

Tips

Remove pork chops from bones and slice if desired. Try this recipe with grilled peaches in place of the plums. Substitue manchego cheese for the halloumi cheese if needed.
