Ingredients

1 pound Fusilli Pasta (or your favorite pasta)

4 Peaches, pitted and sliced into halves

4 tsp Extra Virgin Olive Oil (divided)

1 Tbs Lemon Juice

10 to 12 large Green Olives, pitted and crushed

4 ounces of firm Blue Cheese

½ Cup sliced Almonds

¼ Cup chopped fresh Parsley

Salt and Pepper to taste

Directions

Cook pasta in salted water as directed while oiling grill grates and heating grill to high heat. Drain cooked pasta, cover, and set aside. Drizzle peach halves with 2 tablespoons of olive oil and grill for 2 minutes on each side until charred with grill marks. Set aside to cool. Slice blue cheese into thin chips and toss with cooked pasta, 2 tablespoons of olive oil, lemon juice, crushed olives, almonds, parsley, then salt and pepper to taste. Cut grilled peach halves into 3 or 4 slices per half, add to pasta mixture, and toss gently to combine. Serve and enjoy.

Tips

Place blue cheese in the freezer for a few minutes to make slicing easier.

Add crushed red pepper flakes if you like it spicy.

For a low-carb version, substitute grilled zucchini for the cooked pasta.
