If you are ready to cook something new and scrumptious, then look no further. This sweet and savory recipe creates glazed chicken that will have your mouth watering. The preparation includes marinating the chicken overnight and making an incredible dipping sauce. The finished product is a main dish bursting with flavor.

Gather the items listed here and cook up a batch of Soy Sauce and Citrus Marinated Chicken as soon as you can. This recipe makes four servings, and is sure to be one that you will return to again and again.

Ingredients

Chicken

4 Garlic Cloves, crushed

1 Tbs Fresh Ginger Root, diced

1 Cup of Fresh Citrus Juice (Grapefruit, Orange, or Lemon)

1/2 Cup Soy Sauce

1/3 Cup Apple Cider Vinegar

1/4 Cup Sugar

Salt to taste

1 Chicken (3 to 4 pounds) halved and backbone removed.

Dipping Sauce

1 Stalk Lemon Grass

1/2 Cup Water

2 Shallots, peeled and halved

2 Scallions, chopped

1 Cayenne Pepper, seeded and chopped

4 Garlic Cloves

2 Tbs Fresh Ginger, chopped

2 Tbs Fish Sauce

2 Tbs Lime Juice

1 tsp Sugar

1 Large Grapefruit

3 to 4 Cilantro Sprigs, chopped

Directions

For the marinade, combine garlic, ginger, citrus juice, soy sauce, vinegar, and sugar in a mixing bowl and stir well. Place chicken into a large zip-closure plastic bag with the marinade. Refrigerate overnight.

Preheat oven to 425ºF. Remove chicken from marinade and drain. Season chicken with a light sprinkle of salt and roast on a foil lined pan for 30 to 40 minutes until browned and cooked throughout.

For the dipping sauce, bruise the lemon grass with a rolling pin. Add lemon grass to a stockpot with ½ cup of water. Bring to a boil, remove from heat, cover, and allow to cool for 10 minutes. Heat a large skillet over medium-high heat. Add shallots, scallions, chili pepper, and garlic cloves and roast until browned. Reduce heat to low and add strained lemongrass water, fish sauce, lime juice, and sugar. Simmer sauce over low heat for 5 minutes, then strain into a bowl. Peel and remove membranes from grapefruit, cut segments into small pieces, and add to sauce.

Transfer cooked chicken to a serving platter, cover with some of the dipping sauce, and top with the cilantro. Serve with more dipping sauce on the side and enjoy.

Tips

This can also be made with chicken wings, legs, or any combination of chicken.

The chicken can also be grilled over charcoal for added outdoor flavor.

The marinade and dipping sauce is also great for porkchops.
