Ingredients

Sauce

1 ripe hale groves mango

2 Tbs hot sauce

1 Tbs grated fresh ginger

2 Tbs soy sauce

1 garlic clove, crushed

1 Cup water

Chicken Legs

6 chicken drumsticks

1 egg

2 Tbs cornstarch

2 Tbs all-purpose flour

¼ tsp salt

¼ tsp pepper

Vegetable Oil

Celery sticks and ranch dressing if desired

Directions

Peel and chop the mango into 1-inch pieces, then smash in a small bowl using a large fork. In a saucepan combine smashed mango, hot sauce, ginger, soy sauce, and garlic. Add the water and bring to a boil over medium-high heat, stirring occasionally to prevent sticking. Reduce heat to simmer and cook for 20 minutes. Remove from heat, cover, and set aside.

In a wide stockpot or deep frying pan, heat vegetable oil to 350ºF. While oil is heating, beat the egg in a small bowl until mixed. Add salt and pepper. Transfer egg mixture to a 1-gallon zip-closure food storage bag. Add chicken legs, close bag, and shake to coat the chicken. Add flour and cornstarch, and toss.

When oil is heated, use tongs to carefully add coated chicken legs to the oil and fry until cooked thoroughly and all juices run clear. Remove cooked chicken legs, drain on paper towels, then toss the legs with the sauce in a large mixing bowl. Serve hot with celery sticks and ranch dressing on the side.

Tips

This recipe can also be made with chicken wings or thighs.

For extra heat, add ¼ tsp of cayenne pepper to the egg wash.

This sauce is also great as a topping for grilled fish or grilled eggplant.
