INGREDIENTS
½ cup sugar
2 tablespoons flour
Grated rind of one Hale orange
½ cup finely ground blanched almonds
4 large eggs
½ cup orange juice
1 tablespoon lemon juice
1/3 cup melted unsalted butter or margarine
½ teaspoon almond extract
1 9” unbaked pie shell
PREPARATION
Preheat oven to 325 degrees
In mixing bowl, combine the sugar, flour, orange rind, and almonds, pressing out any lumps. Beat in the eggs, one by one, then stir in the orange juice and lemon juice, and then add the melted butter and almond extract. Pour the batter into the pie shell and bake, uncovered, at 325 degrees for about 45 minutes until the filling is puffed, golden brown, and quivers only slightly when you move the pan. Cool the pie to room temperature before serving (the filling will fall slightly). Slice in slim wedges.
