Spiced Orange and Pears Recipe

3 each Hale oranges
1 1/4 cups sugar
1 cup water
2/3 cup cider vinegar
10 each whole cloves
2 each cinnamon sticks
1 tablespoon fresh ginger thinly sliced
1 each large firm pear, cored and thinly sliced(unpared)


Place whole, unpeeled oranges in medium saucepan; cover with water; bring to a boil. Boil 20 minutes or until skins are easily pierced with a fork. Drain. Cut each orange into 8 wedges.  In same saucepan, combine sugar, water, vinegar, cloves, cinnamon and ginger; stir over low heat until sugar dissolves. Bring to a boil; add orange wedges, reduce heat, simmer 15 minutes. Add pear slices; cook 5 to 8 minutes or until tender. Cool. Cover. Chill. Relish will last several weeks if stored in a covered container in the refrigerator.

YIELD: about 1 quart
