Valencia Cr?me Dessert Recipe

2 envelopes unflavored gelatin
2 cups sugar
4 egg yolks
2 ½ cups Hale orange juice
3 tablespoons lemon juice
1 teaspoon grated Hale orange peel
2 teaspoons grated lemon peel
2 cups whipping cream, whipped
Dash salt
1 cup Hale Valencia orange sections (plus other fruit as noted)


Mix gelatin, sugar and salt in saucepan.  Beat together egg yolks and add 1 cup of orange juice; stir into gelatin mixture.  Cook over medium heat, stirring constantly, just until mixture comes to a boil.  Remove from heat, stir in orange and lemon peel and remaining juices.  Chill, stirring occasionally until mixture mounds.  Stir in orange sections; fold in whipping cream.  Pour into two-quart mold.  Chill until set and unmold.

YIELD:  8-10 servings.

Or, do not add orange sections, but pour as is into large ring mold.  Then unmold when set, and pour orange sections and strawberries (or other fruit mixture as desired) into middle before serving.
