INGREDIENTS
6 tablespoons (half of an 11-ounce package) sugar-free instant pudding and pie filling
¾ cup skim milk
2 Florida grapefruit, peeled, sectioned, reserve juice
¼ cup Hale orange juice
¼ teaspoon ground coriander
3 Hale oranges, peeled and sectioned
2 kiwi fruit, peeled, cut in wedges
1 cup red seedless grapes
Shreds of orange peel
PREPARATION
In small mixer bowl combine pudding mix, milk, 1/3 cup reserved grapefruit juice, orange juice and coriander; mix according to package directions. In 1-quart serving bowl layer grapefruit sections, orange sections, kiwi fruit and grapes. Spoon pudding over fruit. Sprinkle with orange peel.
YIELD: 6 servings. 127 calories per serving.
