Vidalia Onion Pie Recipe
INGREDIENTS 3 cups Vidalia onions (may need more) 3 eggs 1 cup milk 1 cup bisquick 1 cup grated cheese (any cheese you like) PREPARATION Cut Vidalia onions into rings and separate. Butter pie dish (10 inch). Pile onions in dish to the top. In bowl mix and beat well, eggs, milk and bisquick. Pour over onions. Then sprinkle grated cheese on top. Bake at 350F about 45 minutes till set.

PREPARATION 1 quart green but mature mangos peeled and cut in ½ inch cubes or sliced. Chop together: 1 large onion, 6 sweet and 6 hot peppers, add 1 teaspoon salt. Let stand 1 hour and drain. Discard liquid. Heat to boiling: 1 cup grapefruit juice with ½ pint vinegar, 1 cup brown sugar, add ½ pound raisins, 1 teaspoon white mustard seed, the prepared mangos, onion, and pepper. INGREDIENTS 3 large Florida grapefruit 2 medium Florida oranges 1 medium mango diced ½ small red onion peeled and diced 1 small red pepper julienne 1 small yellow pepper julienne 1 large Anaheim chili julienne 2 tablespoons cilantro chopped ¼ teaspoon salt 1 teaspoon olive oil PREPARATION Peel and segment the grapefruit and oranges (save the juice). INGREDIENTS 4 cups ground mango 2 tablespoons lime juice 7 ½ cups sugar 1 bottle liquid pectin PREPARATION Combine first 3 ingredients, mix well and bring to a full rolling boil. Boil hard for 1 minute stirring constantly. Remove from heat and at once stir in the pectin. Stir and skim by turns for 5 minutes to cool slightly and to prevent floating fruit. Pour into hot sterilized jars and seal. Makes about 12 six-ounce glasses.

INGREDIENTS 6 Granny Smith Apples, peeled and diced ½ teaspoon cinnamon 1 teaspoon nutmeg 3 Hale Navel oranges, peeled and sectioned 2 tablespoons brown sugar 2 teaspoons grated orange rind PREPARATION Place apples, oranges, cinnamon, nutmeg, grated orange rind and brown sugar in large saucepan. Barely cover with orange juice (from the peeled and sectioned oranges) and water. Cook over low heat until apples are softened. Remove from heat and stir well before serving.
Marinated Vidalia Onion Slices Recipe
INGREDIENTS 4 Vidalia onions, sliced thin 1 cup water ½ cup vinegar ½ cup mayonnaise ½ teaspoon celery salt 1 cup sugar PREPARATION Combine Vidalia onion slices with water, vinegar and sugar. Marinate for 4 hours. Drain onions. In a bowl combine onions with mayonnaise and celery salt. Fold mixture. Refrigerate. Serve on a bed of lettuce.
Orange Almond Rice Recipe
INGREDIENTS 6 tablespoons butter or margarine 2 cups fresh Hale orange juice 1 cup water 2 teaspoons salt 1 1/2 cups raw, long-grain rice 1/2 cup sliced, blanched almonds 1/3 cup chopped parsley PREPARATION Combine butter, orange juice, water, salt and rice in a 3-quart saucepan. Bring to boiling, stirring once or twice. Reduce heat, cover. Cook, without removing cover or stirring for 15 to 20 minutes or until liquid is absorbed and rice is tender. Meanwhile, place almonds in small skillet. Toast, over medium heat, stirring constantly, until golden brown. Stir almonds and parsley into rice. YIELD: 8 servings
