Florida Fruit Relish Recipe



7 medium-size ripe tomatoes, cubed
3 medium pears, pared, cored, cubed
3 medium onions, cubed
3 medium green peppers, cubed
1 Hale Orange, unpeeled, sliced 1/4 -inch thick, cut into small wedges
1 1/2 cups cider vinegar
1 cup Hale Orange juice
1/2 cup sugar
2 tablespoons pickling spice, tied in cheesecloth
1 tablespoon salt


In a large saucepan or kettle, combine all ingredients. Cook over low heat, uncovered, 2 hours. Stir frequently to prevent mixture from sticking to pan. Relish is ready when it is about the thickness of applesauce. Pour into jars. Cover. Refrigerate up to 6 weeks.

YIELD: 6 cups
