Ingredients:
1½ lbs. ground sirloin
2 Tbsp. pickled jalapeño peppers, chopped
2 Tbsp. pickled jalapeño pepper juice
1 tsp. kosher salt
6 thick bacon slices
1 small sweet onion, sliced
½ c. peach chutney
4 ounces goat cheese, softened
6 hamburger buns, toasted
1 medium peach, sliced
Fresh basil leaves
Directions:
- Pre-heat grill to medium-high heat. Combine ground sirloin, peppers, pepper juice, and salt and gently shape into six 4-inch patties.
- Cook bacon in a large skillet over medium heat until crisp (about 8 minutes). Remove and drain on paper towels. Reserve 2 tablespoons of bacon drippings in skillet; increase heat to medium-high, and sauté onion until tender (about 6 minutes). Remove from heat and stir in chutney.
- Grill patties with grill lid closed until beef is no longer pink in center (about 4 to 5 minutes each side). Top with cheese and serve on hamburger buns with onion mixture, bacon, peach slices, and basil leaves.
